Once the beans reach Velour's state-of-the-art chocolate factory, The process of transforming raw cocoa beans into velvety dark chocolate is a labor of love and precision. First, the beans are carefully roasted to bring out their rich, complex flavors. This is followed by winnowing, where the outer shells are removed to extract the nibs. The nibs then undergo a process called conching, where they are ground to a fine paste and refined to achieve the perfect texture.
